Savory Roasted Garlic, Truccos® Garlic “Butter”
Preheat oven to 400°F.
Take each head of Fresco garlic and remove papery outside skin while leaving the bulb of Fresco Garlic cloves all intact. Then cut off the top portion of the cloves by approximately ¼ of an inch. Place each Fresco Garlic head on aluminum foil and drizzle 1 Tablespoon of olive oil over the Fresco Garlic cloves. Then wrap the Fresco Garlic in the aluminum foil and bake for 35-45 minutes.
Check on the Fresco Garlic at 35 minutes to see if the center of a clove is soft with the tip of a knife. Cook until the Fresco Garlic cloves are golden brown.
Remove from oven, press soft golden cloves out into a small bowl. Mash with the back of a spoon, add 1 remaining tablespoon of olive oil continue to mash, add chopped rosemary, asiago cheese and salt and pepper to taste. Serve with toasted bread, crackers or TruStar Fresh Figs!
- 2 heads of FRESCO garlic
- 3 tablespoons olive oil
- 1 teaspoon fresh rosemary sprig leaves, chopped
- 1 1/2 tablespoons asiago cheese, freshly grated
- salt – to taste
- freshly ground pepper- to taste
