Grilled Pineapple Fig Salad
This is a simple and healthy salad to make for family or guests (it is easy yet impressive)! It provides a single delicious portion on your own personal “pineapple plate”!
Directions
Heat a frying pan over medium heat. Place sliced onion and 2 tablespoons of olive oil in pan, cook onions until they become translucent and start to brown. Add 3 tablespoons of water to pan with brown sugar, and salt and pepper to taste. Cook until the onions are browned/caramelized. Remove onions and set aside.
Brush pineapple slices with remaining 1 tablespoon of olive oil and place slices on the same pan already at medium heat. Cook pineapple until it begins to brown (About 2 minutes each side).
Place grilled pineapple slices on a large serving plate. Top each pineapple “plate” with arugula, sweet onion, a bit of goat cheese, and 1 sliced Fresh Fig, then drizzle with balsamic vinegar and serve!
Ingredients
- 1 Pineapple cored and sliced into ½ inch-1 inch slices (personal preference)
- 8 TruStar Fresh Figs, sliced into quarters
- 1 small sweet onion, sliced
- 3-4 cups Arugula
- 3 oz Goat Cheese
- 3 tablespoons of olive oil
- ½ tablespoon brown sugar
- 3 tablespoons of water
- salt – to taste
- freshly ground pepper- to taste
- Balsamic vinegar (to drizzle on top)
